Shake Shack is joining the list of food joints at Park Meadows mall, bringing not only an outdoor patio dining section but also the only alcoholic beverage options to the shopping center's food hall.
“Just giving another twist to the way you can dine,” Park Meadows Senior General Manager Pam Kelly said.
The site is under construction, converting a former food hall seating section into a food stand designed for Shake Shack, including pedestal ordering stations.
The burger chain will be located next to the food hall entrance. Kelly said Park Meadows expects Shake Shack to open in September or October.
The restaurant chain owned by restaurateur Danny Meyer began as a hot dog stand near New York City's Madison Square Park in 2001, according to the company website. Shake Shack opened its first permanent location in 2004 before expanding across the country, and today describes itself as “fine-casual” dining.
A Shake Shack location opened on Denver International Airport's B Concourse on July 20. The chain also has stores in Boulder, Edgewater, Highlands Ranch and Denver's Cherry Creek North and RiNo districts.
The company announced July 21 that it would invest more than $10 million in wages, hiring bonuses and other programs over the next few years in a bid to attract and retain workers, following a $6 million expenditure in 2020, Market Watch reported.
Park Meadows was in search of a burger operation it could add to the food hall, and the restaurant's popularity in New York and Chicago helped draw their attention, Kelly said.
“We're hoping with all of the people who have moved to the area, that people will get to have their favorite from where they lived before,” she said.
The Lone Tree City Council approved a beer and wine liquor license for Shake Shack on July 20. The restaurant will not serve hard liquor, but patrons can drink beers and wine in the patio area. Alcohol will not be permitted outside of the Shake Shack patio or elsewhere in the food hall.
Lone Tree Mayor Jackie Millet said during council's discussion the city takes liquor licenses seriously and asked what protocols Shake Shack would implement to prevent underage drinking.
Management told council all staff will be trained in checking licenses, among other state liquor license requirements; customers will be instructed in where they can carry the alcohol; and mall security will be briefed on what the restaurant's cups and supplies look like.
A spokesperson for Shake Shack said details including the number of jobs Shake Shack is bringing and an exact opening date will be available in the coming months.
