WHAT THEY DO:

La Estrellita serves several types of soup with the menudo cooked in a rich, spicy southwestern chile broth with honeycomb tripe hominy and the tortilla soup simmered in a savory, spicy broth with chicken corn, red bell pepper topped with avocado and crisp tortilla strips. If you prefer a light meal, the fajita salad is served with marinated grilled chicken or steak, onions, bell peppers, tomatoes, tortilla strips, mixed greens, and a choice of dressing. They also have a variety of appetizers, from spicy chicken wings, a star sampler with nachos supreme, cheese quesadilla, one beef and chicken taquito, and chile con queso.

The main menu offers several main dish specialties, the spicy fish tacos served with grilled tilapia, jalapeno salsa, and caramelized onions. La Estrellita also serves up a variety of tacos dishes such as pork, Indian tacos, and several types of burritos, stuffed sopapillas, and carne asada.

They are open for breakfast serving loaded burritos and huevos rancheros. In addition, offer office gluten-free dishes on request.

HISTORY:

La Estrellita opened in Fort Lupton from 1955 to 1968 by Salome and Stella Montoya, serving traditional authentic cuisine. Then in 1986, after being laid off from Adams County, their son John opened the restaurant in Brighton in a tiny section with a kitchen where it is today. In 2011, John’s daughter, Gina Von-Ah, and her husband took over, continuing the tradition and expanding the restaurant with an outdoor patio.
